Hi Reader,

Since it’s soup season, I wanted to start with the foundation of so many cozy winter recipes: homemade chicken stock.

It really is a game-changer. The flavor difference between most store-bought stocks and a homemade one is immense. And it’s really very easy to do. I have a post about making your own, but you’re really just throwing all the bones and leftovers in a large pot, covering with water, simmering for a while, then straining out all the gunk.

You can feel free to add in onions, carrots, and other veggies for more flavor, but it’s really not necessary. Just a simple boil with the bones and you’re on your way to the best soup of your life.
