Confession time: I don’t actually love pumpkin pie. There, I said it!

But what I do love is pumpkin when it’s paired with something creamy, tangy, and a little bit indulgent… like cheesecake. And that’s exactly why I created these No-Bake Pumpkin Cheesecake Bars.

They’re everything I want in a fall dessert: warmly spiced, a little sweet, a little tangy, and a crunchy graham cracker crust.

And if you’re hosting Thanksgiving — or bringing a dessert and don’t feel like stressing about oven space — these bars are the perfect solution. They chill beautifully, slice cleanly, and taste like fall wrapped in a cheesecake hug.

Plus, you can make them the day before, which I always consider a holiday miracle.
