A few weeks ago, we talked about how it’s iced drink season. This week, we start sinking into the realization that soon it will also be no-bake/no-cook/low-cook season, which I do enjoy–I LOVE pasta salad, regular salad, wraps, and sandwiches. And I love an easy, fun no-bake dessert too. I just don’t like being sweaty.
Let’s kick things off with one of my favorite salads of all time. This bacon, beet & avocado salad has the perfect balance of salty/sweet/savory flavors and crunchy/crisp textures.
It’s also got feta and candied pecans. I usually “candy” pecans myself in a lazy fashion by just throwing them in a skillet with brown sugar and butter until I think I've burned the sugar, then dumping it all out on a piece of parchment. It works. But you can also buy pre-made! Come the middle of summer, I will be doing the same. :)
And let's not forget one of–if not the most–important elements of a salad: the dressing. If your dressing is good, even just a straight lettuce salad can be great.
This is that kind of dressing. It’s my go-to vinaigrette for basically everything. I just make little tweaks to the seasonings and add elements to switch it up.
