Spring is almost here (my favorite season!), and I’ve been craving all the bright, fresh-herb energy. So I wanted to share one of my favorite easy warm-weather recipes with you: couscous tabbouleh.

It’s packed with parsley, mint, cilantro + lemon — super fresh, super simple, and perfect as a side dish or light lunch.

I love it because it comes together quickly and requires minimal cook time. It’s also great to pair with chicken or salmon for a complete meal.

If you’re ready to trade cozy soups for something green and zippy, this one’s a great place to start.
