If you’re looking for a delicious Father’s Day meal with minimal prep work and cook time, I got you. My husband LOVES this meal and honestly, I do too. It's the kind of meal we are still talking about the next day.
Here’s your shopping list:
- Trader Joe’s brats - seriously the best
- Bell peppers (red, orange and/or yellow)
- Trader Joe’s Brioche hot dog buns
- Mustard
- Potatoes
And honestly, that’s all you really need other than some oil, salt and pepper. Sometimes when I want to be a little more fancy, I’ll make a chipotle aioli dip for the potatoes. It's not even really fancy, it's just two ingredients: mayo and some of the liquid from a can of chipotle peppers in adobo to taste.
I slice the peppers and onions thin and place them in a little foil packet. I know, foil is bad, but I use it sparingly. Then just toss it on the grill and let them cook until super soft. This is the perfect topping for brats with a little mustard. Agh so good. We will sometimes also add sauerkraut but if you want to keep things super simple peppers and mustard are all you need!
For the potatoes, you have options. I will also sometimes cook those in foil. If I am cooking in foil, I like to get small baby potatoes because they cook better that way. But this week I tried something different. I employed my crispy-potato-making method from this skillet potato recipe by microwaving the potatoes until tender. Then chopping and crisping up in a cast-iron skillet on the grill. You can also par-boil the potatoes. Either way, you just want them tender, but firm enough to cut and hold their shape.
You can also just cook some frozen fries in the oven and call it a day. Sometimes we do that too.
And if you need a dessert, I’ll recommend what my dad would have wanted – these peanut butter cup brownies. They are rich, chocolate-y peanut butter-y and so, so good.
