I buy ground chicken or turkey every week and I love turning it into burgers but I also LOVE turning it into these meatballs!
They are fresh-feeling thanks to a little touch of lemon zest. They're also gluten free because we skip the typical breadcrumbs–you don’t need them!
Plus they are versatile! You don’t have to add the lemon (although I think you should 😊), you can use raw garlic instead of powder, and you can use all fresh herbs instead of a mix of dried and fresh.
You’ll still end up with a tasty meatball that anyone would be glad to enjoy atop a plate of spaghetti all covered with cheese.
