Hi Reader,

It’s officially soup season (even though it's been in the high 70's here in Southern California!). However, I'm still embracing soup season with this chicken tortilla soup. It’s warm, comforting, and full of flavor without being heavy.

This version is made with simple, wholesome ingredients and comes together easily. I like to make the crispy tortilla strips myself, which takes a tiny bit of extra time, but it's well worth it! It's something you can prep ahead, but if you need something quicker + easier just use tortilla chips, no shame.
